How to Roast Garlic – Sharon Palmer, The Plant Powered Dietitian

Fragrant, nutty roasted garlic is one of my favorite go-to recipes. When the garlic cloves are roasted, the flavors caramelize together and the pungency gives way to sweetness. You can serve roasted garlic as an appetizer with olives and grapes. Or you can spread roasted garlic over breads and crackers as a flavorful topping. Or you can use roasted garlic in dishes, such as dips, pasta sauces, and salads. The best thing is that roasting garlic is so easy! Just follow these easy directions for how to roast garlic.

Step-by-Step Guide:

Select plump garlic bulbs, such as these heirloom garlic bulbs I got at the farmers market.
Or you can use traditional garlic from the supermarket, but look for large cloves.
Remove as much of the papery covering of a whole garlic bud as possible, without breaking up the garlic cloves from the bud.
Your garlic should look similar to this when you’ve peeled away the paper covering.
Trim the very top of the garlic with a sharp knife.
You should expose all of the garlic cloves when you cut away the top—save those tops for cooking in another recipe.
Place the trimmed garlic bud in the center of a small piece of aluminum foil.
Drizzle with 1 teaspoon extra virgin olive oil.
Cover tightly with the foil.
Place the covered garlic bulb in a small baking dish and roast in a 375 F oven for 40 minutes.
Remove from oven, let cool for about 5 minutes. Remove from foil and serve immediately. May store in the refrigerator for up to 3 days.
Voila! This garlic clove is served on a chard leaf with Swedish flatbread.
Just pick out those roasted garlic cloves with a fork and enjoy!
