45 BEAUTIFUL Plant-Based RAINBOW Recipes

Mother Nature bestowed plant foods with all the shades of the rainbow. Red in apples, strawberries, and tomatoes; orange in carrots, pumpkins, and peppers; yellow in summer squash, corn, and wax beans; green in kale, broccoli, and jalapenos; blue in blueberries, blackberries, and corn; purple in cabbage, onions, and potatoes. All of those colors in these plant foods signal the presence of powerful phytochemicals, which are actually the color pigment found in the plants. These were developed in the plant over the eons as a natural defense system, and now we know that they protect humans from disease as well. Eating from the rainbow is a great way to protect your health, and enjoy a range of delicious foods. I am obsessed with colorful plant foods!
